simple paleo - paleo fried chicken

PREPARATION: 10 minutes

COOK: 10-14 minutes (20 minutes if you like it extra crispy)

SERVES: 4

INGREDIENTS

1.5 pounds of organic boneless chicken thighs 

1 1/4 cups of organic almond meal 


2 large organic eggs

1/2 tbsp of himalayan salt 

1/4 cup of organic ghee 


METHOD

1. In a large skillet, heat ghee on medium-high.  

2. Beat the 2 eggs in a bowl.





3. Mix almond meal and salt into a another bowl. 


4. Dip chicken thigh into the egg (covering both sides of the thigh well), then roll into the almond mixture. Make sure it is completely covered in the mixture.

5. Place chicken into the hot oil, 1/3 inch apart if possible.




6. Lower heat to medium and pan fry the chicken about 5-7 minutes on each side or until fully cooked. Test the chicken by making sure theres no pink in the middle. 


*If you have time,  lower the heat from medium to low. Allow the chicken to cook in the ghee for 5 minutes longer on each side on the low heat (for a total cook time of about 20-24 minutes). The longer it cooks, the crispier it gets!
