A dear friend of mine who´s really into the power of raw foods gave me a pack of Sunfood Superfoods Coconut wraps. Now, I´m totally addicted. Here´s one of the many delicious and super easy paleo meals I have created using the wraps.
PREPARATION: 5 MINUTES
SERVES: 1-2
INGREDIENTS (Cold)
Organic spring mix salad
Slices of an organic cucumber
A few dried cranberries
Organic avocado slices (optional)
1/2 tbsp of organic balsamic vinegar
1/2 tbsp of EVOO
Sea Salt
Black Pepper
METHOD
1. Make the chicken. Let it sit until it cools then refrigerate or use leftovers from fridge.
2. Lay chicken down first on the wrap and season with salt and pepper.
3. Add spring mix then cucumbers and drizzle with balsamic vinegar and olive oil. Sprinkle with dried cranberries and add *Avocado slices if you like.
