simple paleo - paleo nut-free chicken fingers

paleo nut-free chicken fingers

PREPARATION: 5 minutes

COOK: 10-14 minutes 



1 pound organic chicken breasts tenders

1 cup of organic coconut flour  

1 organic egg (free range) 

1/2 tbsp of himalayan salt 

1/2 cup of organic coconut oil


1. Pat dry the chicken. 

2. Whip egg in a bowl.

3. Heat coconut oil in medium sized pan on medium. 

3. In a separate bowl, mix coconut flour and salt. 

4. Dip chicken tenders into egg then into the flour mix. 

5. When oil is nice and hot, place chicken tenders into pan a 1/2 inch apart. 

6. Cook chicken 5-7 minutes on each side. Remember to move the chicken around to prevent burning and sticking. Chicken should be a nice golden brown color. Make sure it´s thoroughly cooked.

7. Serve with your favorite Paleo dipping sauce (mine is Steve´s Paleogoods Maple Mustard).
