simple paleo - paleo gazpacho



Hubby is Catalan AND Paleo... hasn't been the easiest task trying to make him comfort food from his home that is Paleo. But here´s an option that has been ¨Patalan¨ approved.

Gazpacho is the perfect for a warm sunny day! It´s so refreshing and doesn't take very long to make.


PREPARATION: 15 minutes


INGREDIENTS

2 lb. organic ripe tomatoes, chopped

2 small cucumbers, chopped

1 clove of organic garlic, minced

1/2 organic bell pepper, seeded and chopped 

1/4 medium organic white onion, chopped 

2 tbsp of sherry vinegar

1/2 cup extra virgin olive oil

1 tbsp of himalayan salt 

GARNISHES (OPTIONAL)

1/2 organic green bell pepper, seeded and diced

1/2 organic white onion, diced 

1 organic tomato, diced

1/2 organic cucumber, diced 

1 organic avocado, diced or sliced 


METHOD

1. Puree all the ingredients together in food processor until smooth. *My hubby likes it a little chunky, so I blend on a low setting.

2. Chill the gazpacho in refrigerator for at least 2 hours.

3. Serve with garnishes on the side.
