simple paleo - paleo kale chicken salad

paleo kale chicken salad
PREPARATION: 10 minutes

SERVES: 4

INGREDIENTS

2 cups of organic kale, finely chopped

1 ripe avocado, peeled and pitted 

2 cups of paleo fried or grilled chicken, chopped 

1/2 organic apple, chopped into small pieces

1/3 cup of Primal Kitchen Ranch, or your own paleo ranch dressing

1/4 cup organic currants 

1/2 tsp of Himalayan salt

(OPTIONAL INGREDIENTS)

1 paleo bacon, chopped

1/4 cup organic pine nuts


METHOD

1. In a large bowl, using your hands or a wooden spoon, combine kale and avocado, . Make sure avocado is completely smashed and mixed in with the kale. No lumps. Season with the salt.

2. Add the rest of the ingredients to the bowl, mix well.
