simple paleo - paleo fried eggplant

simple paleo eggplant side dish
Preparation: 10 minutes 

Cook: 5 minutes

Serves as a Side Dish 


1 medium sized eggplant

3 eggs (make sure they are omega-3 enriched, free-range eggs)

2 tablespoons of organic coconut oil

2 teaspoons of sea salt 


1. Cut eggplant in slices.

2. In a medium skillet, heat coconut oil on medium-high. 

3. While coconut oil is heating, whisk the 3 eggs and salt in a medium sized bowl. 

4. Place eggplant slices into bowl of whisked eggs.

5. With a fork, one by one, place soaked slices into the hot pan.

6. Cook each side for about 45 seconds to 1 minute.
