I am so happy with my paleo burrito that I have had it almost twice a week for a few weeks now for lunch. It´s quick, easy and 100% paleo. Please share this amazingly easy recipe!

INGREDIENTS
For the tortillas:

2 organic eggs
1 cup of organic unsweetened almond milk
1/4 cup of coconut flour
1 cup of tapioca flour
1/4 teaspoon of sea salt
For the remaining burrito:
1 pound of grass fed ground beef
1 cup of organic unsweetened almond milk
1/4 cup of coconut flour
1 cup of tapioca flour

2 tablespoons of organic coconut oil
2 teaspoons of sea salt
1 cup of chopped onion
1/2 cup of cilantro
lime wedge
*guacamole of choice if desired

METHOD
Tortillas:
Tortillas:
1. Whisk milk and eggs in a medium bowl.
2. Add tapioca, salt and coconut flour to the mix. Mix well.
3. Heat small skillet over medium heat.
4. Pour half a cup of mix into skillet.
5. Fill the pan with the mix and reduce the heat to low. Let it heat for about 1 minute, flip and cook the other side. Cook until a nice light brown.
6. Set the tortillas to the side and cover with a towel or in a tortilla keeper.
Burrito filling:
1. Heat coconut oil on medium high for 1 minute.
2. Break grond meat apart with hands and add to the oil.
3. Mix meat well with wooden spatula until all brown (between 5-10 Minutes). Add salt and pepper.
4. Once you are sure that the meat is fully cooked, place the paleo tortilla on a plate then add the meat directly on center. Pile on the cilantro, bit of lime juice and onions as desired. Guacamole is a must for me but my daughter prefers it without...she gets that from her Papa.
