simple paleo - paleo chocolate chunk cookies



PREPARATION: 5 minutes

COOK: 10-12 minutes (plus 5 minutes of cool down) 

SERVINGS: 10-12 cookies

INGREDIENTS 

1 cup of almond flour (Bob´s Red Mill is my favorite!)

1/3 cup of organic 80%-85% cocoa dark chocolate chunks from favorite chocolate bar

1/4 tsp baking soda


1/2 tsp of Himalayan salt 

1/4 cup organic coconut oil (melted)

1 tbsp of organic coconut milk

1 tbsp of organic maple syrup 


1 tsp of organic vanilla extract

METHOD

1. Wrap chocolate bar up in kitchen towel or cloth napkin (still in wrapper) and smash it up with hammer or meat tenderizer (this is not only therapeutic but a great bicep workout haha). Set aside 1/3 cup of chocolate chunks for the batter and freeze the remaining for future baking. 

2. Preheat the oven to 350 degrees F. Use non stick baking pan or line a baking sheet with parchment paper. 

3. In a bowl mix together all the wet ingredients (coconut oil, coconut milk, maple syrup and vanilla extract). Mix well.

4. In a separate bowl, mix together all dry ingredients except the chocolate (almond flour, baking soda, sea salt). Mix well.

5. Slowly add the dry ingredients into the wet and stir to combine. Then, slowly mix in chocolate chunks.

6. Scoop 1 tablespoon of cookie dough and roll into a ball. Place balls one inch apart in pan or sheet.


7. Bake for 10-12 minutes. Let cookies cool for 5 minutes then move to wire rack to cool off completely.
