simple paleo - fall roasted vegetables


PREPARATION: 5 minutes

COOK: 45 minutes

SERVES: 4 (as a small side dish, double the recipe to have it as a main side)

INGREDIENTS 

3 organic sweet potatoes, cut into wedges

1/2 organic onion, diced and separated

2 organic carrots, chopped (try to go with different color carrots, I used 1 yellow one but red carrots are best), chopped

1/2 cup (4oz) of organic crimini mushrooms, chopped in halves


2 cloves of organic garlic, minced 

1 tsp of himalayan salt 

1/2 tsp of organic garlic salt

1/2 tsp of black pepper

METHOD

1. Preheat the oven to 450 degrees F. 

2. Spread vegetables on to a medium baking pan.

3. Add olive oil, salt, pepper and garlic salt and mix evenly with a wooden spoon. Make sure all is coated.

4. Bake for 45 minutes, stirring every 10 minutes.
